  1. Cook baby beets and greens in water until tender (15 or 20 minutes), drain, and chop together.
  2. Season with fat, salt, and pepper.
  3. Or use the tops of larger beets if they are still crisp and green.
  4. They may take longer cooking, but are high in food value.
