Baked Stuffed Beef Heart

Serve with Creamed Onions, Green Beans

Ingredients

  • 3 -4 pound of beef, heart
  • salt
  • 3 slices bacon
  • pepper
  • 1 cup fine bread crumbs
  • flour, for dredging
  • 1 small onion
  • lard, for browning

Directions

  1. Wash hearts and remove enough of center portion to permit addition of the dressing or stuffing.
  2. Dice bacon and fry until crisp.
  3. Combine with bread crumbs.
  4. Season with finely minced onion.
  5. Season cavity in hearts, fill with stuffing, and fasten with skewers.
  6. Roll in flour and brown quickly in hot lard, in a heavy kettle.
  7. Add a small amount of water.
  8. Cover and cook slowly in a moderate oven (350° f) until the hearts are done— 2 to 2-1/2 hours.
  9. Thicken the liquid for gravy if desired.
