Hoppin' John

Ingredients

  • 1 cup cowpeas
  • 1/4 pound bacon
  • 1 cup rice
  • 1 large onion
  • salt, as needed
  • pepper, as needed

Directions

  1. Cook the peas and rice separately.
  2. Cook the onion in the bacon fat.
  3. Add rice and peas and cook until dry.
  4. Add seasoning.
