Black-Eyed Peas and Cheese

Ingredients

  • 1 tablespoon shortening
  • 1 tablespoon finely chopped onion
  • 1 tablespoon finely chopped peppers
  • 2 cup cooked peas, put through sieve
  • 1/2 cup pressed down, grated cheese
  • salt
  • pepper
  • a little lemon juice, or vinegar, if desired.

Directions

  1. If too stiff, moisten with milk.
  2. This may be used as a sandwich filling or the lemon juice or vinegar may be omitted and the mixture baked in a loaf.
