
Black-Eyed Peas and Cheese
Ingredients
- 1 tablespoon shortening
- 1 tablespoon finely chopped onion
- 1 tablespoon finely chopped peppers
- 2 cup cooked peas, put through sieve
- 1/2 cup pressed down, grated cheese
- salt
- pepper
- a little lemon juice, or vinegar, if desired.
Directions
- If too stiff, moisten with milk.
- This may be used as a sandwich filling or the lemon juice or vinegar may be omitted and the mixture baked in a loaf.
