Baked Fillets Margo
Ingredients
- 2 pound rockfish fillets, (rock cod)
- butter, melted
- 1 teaspoon salt
- 1 teaspoon monosodium glutamate
- speck of pepper
- 2 cup milk
- 2 tablespoon butter
- 2 tablespoon flour
- 1 cup remaining milk, in baking dish
- 1/4 teaspoon salt
- speck of pepper
Directions
- Cut fish fillets into serving size pieces.
- Brush pieces with melted butter and sprinkle with salt, glutamate, and pepper.
- Place in shallow baking dish and completely cover with milk.
- Bake, uncovered 1 n a moderate oven, 350 degrees, for 30 minutes.
- Remove fish to warm platter and keep warm, to serve over fish, make cream sauce as follows: melt butter and remove from heat.
- Blend in flour until smooth and add 1 cup remaining milk gradually.
- Return to heat and stir continually until thickened.
- Add seasonings and if desired.
- A, bit of parsley or pimiento for color.
