Baked Fillets Margo

Ingredients

  • 2 pound rockfish fillets, (rock cod)
  • butter, melted
  • 1 teaspoon salt
  • 1 teaspoon monosodium glutamate
  • speck of pepper
  • 2 cup milk
  • 2 tablespoon butter
  • 2 tablespoon flour
  • 1 cup remaining milk, in baking dish
  • 1/4 teaspoon salt
  • speck of pepper

Directions

  1. Cut fish fillets into serving size pieces.
  2. Brush pieces with melted butter and sprinkle with salt, glutamate, and pepper.
  3. Place in shallow baking dish and completely cover with milk.
  4. Bake, uncovered 1 n a moderate oven, 350 degrees, for 30 minutes.
  5. Remove fish to warm platter and keep warm, to serve over fish, make cream sauce as follows: melt butter and remove from heat.
  6. Blend in flour until smooth and add 1 cup remaining milk gradually.
  7. Return to heat and stir continually until thickened.
  8. Add seasonings and if desired.
  9. A, bit of parsley or pimiento for color.
