
Thin White Sauce
Ingredients
- 3/4 cup butter, (6 ounces)
- 1 cup flour, (1/4 pound)
- 1 1/2 tablespoon salt, (3/4 ounce)
- 1/4 teaspoon pepper
- 1/2 gallon boiling water or broth
- 1/2 gallon evaporated milk
Directions
- Melt butter.
- Add flour, salt and pepper, and mix thoroughly.
- Do not allow flour to brown.
- Add water and boil until smooth and thick, stirring constantly.
- Add milk and continue cooking until thickened, about 10 minutes.
- Medium white sauce (for creamed vegetables, meat and fish): increase flour to 2 cups.
