Thin White Sauce

Ingredients

  • 3/4 cup butter, (6 ounces)
  • 1 cup flour, (1/4 pound)
  • 1 1/2 tablespoon salt, (3/4 ounce)
  • 1/4 teaspoon pepper
  • 1/2 gallon boiling water or broth
  • 1/2 gallon evaporated milk

Directions

  1. Melt butter.
  2. Add flour, salt and pepper, and mix thoroughly.
  3. Do not allow flour to brown.
  4. Add water and boil until smooth and thick, stirring constantly.
  5. Add milk and continue cooking until thickened, about 10 minutes.
  6. Medium white sauce (for creamed vegetables, meat and fish): increase flour to 2 cups.
