Chicken Croquettes II

Directions

  1. Combine chicken with chopped vegetables.
  2. Prepare a thick white sauce of the butter, flour, milk, broth, salt and pepper.
  3. Add to the first mixture.
  4. Shape into balls.
  5. Dip in crumbs, undiluted evaporated milk and again in crumbs.
  6. Fry to a golden brown in deep, hot fat (390f).
  7. Or, use buttered crumbs for dipping, place in a greased baking dish and brown in a hot oven.
