Salad Soup
Ingredients
- 1 garlic clove
- 3 tomatoes, finely diced
- 1/2 unpeeled cucumber, thinly sliced
- 6 scallions, (spring onion) or 1 tablespoon finely cut chives
- 1/2 cup very thinly sliced celery
- 3 tablespoon salad or olive oil
- 2 tablespoon white vinegar
- salt
- pepper
- 1 teaspoon monosodium glutamate
Directions
- Rub tureen or large bowl with garlic clove; spear garlic with toothpick and leave in bowl.
- Add tomatoes and cucumber.
- Slice scallions with about 2 inches of green tops; add with celery.
- Add oil and vinegar.
- Sprinkle with salt, freshly ground pepper, and monosodium glutamate; mix well.
- Add tomato juice.
- Chill at least 3 hours.
- Remove garlic.
- Serve with hot cheese crackers.
