Poor Man's Goose

Ingredients

  • 4 pound beef, bola
  • 1 onion
  • 1 teaspoon sage
  • 1 small piece soaked bread
  • 1 ounce suet
  • pepper, to taste
  • salt, to taste

Directions

  1. Make holes in the meat with a skewer, and fill them up with the stuffing, made as follows: chop the suet and onion fine, squeeze the bread dry, and mix all together with the sage, pepper and salt.
  2. Flour the meat and roast it.
  3. Serve with baked potatoes.
