Pan-Fried Fish Fillets

Ingredients

  • 2 pound fillet
  • 1 teaspoon salt
  • 1 egg, slightly beaten
  • 1 tablespoon milk, or water
  • 1 cup fine dry bread crumbs, or corn meal
  • fat or cooking oil

Directions

  1. Cut fillets into serving-size pieces.
  2. Sprinkle with salt.
  3. Mix egg and milk in a flat dish.
  4. Dip fish in egg mixture, then in bread crumbs.
  5. Heat fat about 1/8-inch deep, in a skillet.
  6. Add fish; fry over medium heat, turning to brown evenly.
  7. Reduce heat to low and cook 10 minutes, or until it flakes easily with a fork.
  8. Drain well.
