Pan-Fried Fish Fillets
Ingredients
- 2 pound fillet
- 1 teaspoon salt
- 1 egg, slightly beaten
- 1 tablespoon milk, or water
- 1 cup fine dry bread crumbs, or corn meal
- fat or cooking oil
Directions
- Cut fillets into serving-size pieces.
- Sprinkle with salt.
- Mix egg and milk in a flat dish.
- Dip fish in egg mixture, then in bread crumbs.
- Heat fat about 1/8-inch deep, in a skillet.
- Add fish; fry over medium heat, turning to brown evenly.
- Reduce heat to low and cook 10 minutes, or until it flakes easily with a fork.
- Drain well.
