New England Dinner

Ingredients

  • 4 pound beef brisket, (fresh or corned)
  • 6 carrots
  • 1 small head cabbage
  • 6 onions
  • 12 small beets

Directions

  1. Cover meat with boiling water.
  2. If fresh brisket is used, add 11% tablespoons salt to cooking water.
  3. Simmer slowly in covered kettle 3 to 5 hours or until tender.
  4. Forty-five minutes before serving add onions and carrots.
  5. Fifteen minutes later add quartered cabbage.
  6. Cook beets separately.
  7. Serve on a large platter, with the meat in the center and the vegetables arranged around it.
Note: Serve with Mixed Green Salad
