Hopping John with Pinto or Great Northern Beans

Ingredients

  • 1 cup dried beans
  • 1 cup cooked rice
  • 2 cup water
  • salt
  • 2 ounce salt pork, diced
  • pepper
  • 1/4 cup chopped onion

Directions

  1. Wash the beans well and soak overnight in water to cover.
  2. In the morning add 2 cups more water.
  3. And cook until tender.
  4. Fry the salt pork until crisp remove from the fat and add to the beans.
  5. Brown the onion in the salt pork fat.
  6. Mix all the ingredients, and add salt and pepper to taste.
  7. Continue cooking for 10 minutes.
  8. And serve at once.
