
Creamed Salsify
Ingredients
- 1 bunch salsify
- 2 quart boiling water
- 2 tablespoon butter
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 2 cup milk
- 4 tablespoon flour
Directions
- Scrape salsify, cut in 1/2-inch slices, and let stand for 1/2 hour in cold water to which 1 tablespoon vinegar has been added.
- Drain, cook in boiling water till tender (1/2 to 1 hour), then drain again and serve in a white sauce made from remaining ingredients.
