Creamed Salsify



  1. Scrape salsify, cut in 1/2-inch slices, and let stand for 1/2 hour in cold water to which 1 tablespoon vinegar has been added.
  2. Drain, cook in boiling water till tender (1/2 to 1 hour), then drain again and serve in a white sauce made from remaining ingredients.
