Cheese Omelet

Ingredients

  • 2 tablespoon quick-cooking tapioca
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 3/4 cup milk, scalded
  • 1 tablespoon butter, or margarine
  • 4 egg yolks, beaten until thick
  • 4 egg whites, beaten stiff
  • 1 cup grated sharp cheddar cheese

Directions

  1. Follow directions for puffy omelet, adding 1/2 cup grated sharp cheddar cheese just before folding in egg whites.
  2. Before putting omelet in oven, sprinkle top with an additional 1/2 cup of grated cheese.
