Cereal Cooked In Milk
Ingredients
- 5 1/2 quart boiling water
- 5 1/2 quart evaporated milk
- 3 tablespoon salt, (1 1/2 ounces)
- 5 quart (or 3 pounds, 12 ounces) flaked cereal, such as rolled oats, or 2 1/4 quarts (about 3 pounds granular cereal such as cream of wheat, wheatena, ralston's or cracked wheat
Directions
- Bring water and milk to a boil, stirring occasionally.
- Add salt and cereal, and boil briskly about 10 minutes, stirring constantly.
- Or set over boiling water and cook 30 minutes.
- Corn meal variation: use same amount of water, evaporated milk and salt as above; measure 7 1/4 cups (2 1/4 pounds) corn meal into a heavy saucepan; add water and salt; boil until mixture begins to thicken, then add milk and continue boiling 8 to 10 minutes, stirring constantly; or set over boiling water, and cook 30 minutes.
- Corn meal mush for frying variation: increase corn meal to 14 1/2 cups (4 1/2 pounds).
