Baked Chinook Salmon with Vegetable Dressing

Ingredients

  • 8 pound salmon
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pound box salted crackers
  • 4 cup ground raw carrots
  • 1 cup ground onions
  • 1 cup ground celery
  • 1 cup coarse chopped parsley
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon sage
  • 1/2 teaspoon thyme
  • 1/2 teaspoon dry mustard
  • 2 eggs
  • 1 cup melted butter, margarine or bacon drippings
  • 1 cup buttered toasted bread crumbs
  • 1/4 cup minced onion

Directions

  1. Remove backbone from salmon.
  2. Sprinkle inside of fish with salt and pepper.
  3. Crush crackers.
  4. Add carrots, onions, celery, parsley, seasonings, well beaten eggs, and melted butter, margarine, or bacon drippings.
  5. Mix well and place in cavity of fish.
  6. Place in greased baking dish and bake for 3 hours at 325f.
  7. Remove from oven and remove top skin.
  8. Cover with the following mixture of buttered toasted crumbs and minced onion.
  9. Place in oven and brown for about 15 minutes.
  10. Garnish and serve.
