Béchamel spinach

Ingredients

  • 1/2 peck spinach
  • 1 cup boiling salted water
  • 2 tablespoon butter
  • salt, to taste
  • pepper, to taste
  • 2 tablespoon flour
  • 1/2 cup milk

Directions

  1. Cook spinach as in spinach recipe, drain, and chop.
  2. Melt butter, add spinach, heat, and sprinkle with salt, pepper, and flour.
  3. Add hot milk, stir till well blended, and serve hot.
