Watermelon Rind Pickle

Ingredients

  • 10 pound watermelon
  • 2 pound sugar
  • 1 quart vinegar
  • 1/2 ounce cloves
  • 1 ounce cinnamon

Directions

  1. Boil the melon rind in water until tender ; drain the water off ; make a syrup of the other ingredients.
  2. Boil all this and pour over the rind boiling hot; drain off the syrup and let it come to a boil; then pour it over the second time and seal jars.
