Uncooked Green Tomato Chow Chow

Ingredients

  • 1 quart (6 to 7 medium-sized) finely chopped green tomatoes
  • 1/2 cup finely chopped green pepper
  • 1/4 cup salt
  • 3 cup finely chopped cabbage
  • 1 tablespoon dry mustard
  • 1/2 cup sugar
  • 1/2 cup finely chopped onion
  • 1 tablespoon celery seed
  • 2 tablespoon horseradish
  • 1 cup vinegar

Directions

  1. Sprinkle layers of tomatoes, cabbage, onion, and green pepper with salt ; let stand overnight.
  2. In the morning squeeze vegetables dry.
  3. Add other ingredients.
  4. Pour into clean jars and cover.
  5. Kept in refrigerator or other place as cold, relish will keep from 2 to 3 weeks.
