Stuffed Peppers

Ingredients

  • 4 peppers
  • 4 tablespoon butter
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 1/2 cup bread crumbs
  • 4 tablespoon chopped meat, or 6 tablespoon grated cheese

Directions

  1. Vegetables should be thoroughly washed and cooked till tender in freshly boiling, salted water (1/2 tablespoon salt to 1 quart water).
  2. Remove stem end and seeds from the peppers and parboil 10 min.
  3. Drain thoroughly, turning upside down to dry, and fill with a stuffing made from the stale bread crumbs and the seasonings, adding enough boiling water to moisten well.
  4. Bake 25 to 30 minutes in a moderate oven and serve with or without toast and brown sauce.
