Spanish Omelet

Ingredients

  • 3 tablespoon butter, or margarine
  • 2 tablespoon minced onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon sugar
  • dash of cayenne pepper
  • 2 tablespoon minced green pepper
  • 1/3 cup thinly sliced mushrooms
  • 1 cup canned tomatoes
  • Puffy Omelet Ingredients

Directions

  1. Melt butter or margarine in 1- quart saucepan; add onion; cook until golden brown.
  2. Add remaining sauce ingredients; cook over very low heat 15 minutes or until vegetables are tender.
  3. Prepare omelet.
  4. Turn out on platter.
  5. Place vegetable mixture between folded layers and around omelet.
  6. Serve at once.
