Savory Beef Liver and Spaghetti

Serve with Tossed Green Salad, Corn Sticks

Ingredients

  • 1 pound beef liver
  • 2 tablespoon butter or cooking oil
  • 1 1/2 tablespoon flour
  • 1 No. 2 can tomatoes
  • 1/2 onion
  • 1 teaspoon salt
  • 1/2 green pepper
  • 1/8 teaspoon pepper
  • 1/2 cup mushroom, stems and pieces (if desired)
  • 1/2 garlic clove
  • 3 cup cooked spaghetti

Directions

  1. Dip liver in boiling water for 1 to 2 minutes, then cut in fine cubes and dredge with flour.
  2. Chop onion, green pepper and mushrooms and let fry in butter or oil with the chopped liver until liver is lightly browned (about 10 minutes).
  3. Add tomatoes, seasonings and garlic, and cover.
  4. Cook slowly for 20-25 minutes.
  5. Serve over boiled spaghetti with a sprinkling of grated dry cheese over the top.
