Sauted Halibu

Ingredients

  • 2 1/2 pound halibut, steak
  • 4 tablespoon egg yolks
  • 1 T- water
  • 1/4 teaspoon pepper
  • 1 teaspoon salt
  • 1 1/2 cup cracker crumbs
  • 1 tablespoon lemon juice
  • 4 tablespoon fat
  • 2 tablespoon melted butter
  • 1/4 teaspoon onion juice

Directions

  1. Mix the pepper, lemon juice, onion juice, salt, butter, egg and water.
  2. Wipe the halibut with a damp cloth and then cut into strips two and a half by four inches.
  3. Dip each strip into the above mixture and roll in cracker crumbs.
  4. Place the fat in a frying-pan, and when hot add the halibut.
  5. Brown thoroughly on each side and garnish with lemon and parsley.
