Salsify or Vegetable Oyster Soup

Ingredients

  • 1 1/2 cup diced salsify
  • 1 1/2 cup water
  • 1 tablespoon butter
  • 1 quart milk
  • 1 tablespoon vinegar
  • salt
  • pepper

Directions

  1. Scrub, scrape and clean salsify.
  2. Dice and cook in salted water, with 1 tablespoon of vinegar added, until tender.
  3. Drain, add butter and rich milk, salt and pepper.
  4. Bring to a boil and serve with crackers.
