Rolled Flank of Beef

Ingredients

  • 1 pound round steak, one inch thick
  • 1 teaspoon salt
  • 2 tablespoon flour
  • 2 one-inch cubes of suet

Directions

  1. Wipe the meat, trim the edges, pound on both sides with the edge of a plate to break the tendon.
  2. Place the bread dressing on the steak, roll, and tie with a cord.
  3. Roll in the flour and salt.
  4. Place in a small dripping pan, put the suet on the top of the meat, add enough water to cover the bottom of the pan, and bake in a moderate oven for fifty minutes.
  5. Baste frequently.
