Rockfish Salad

Ingredients

  • dash pepper
  • 2 cup flaked, cooked rock fish
  • 1 cup coarsely chopped cucumber
  • 2 tablespoon lemon juice
  • 2 tablespoon chopped pimiento
  • 1/4 cup mayonnaise or salad dressing
  • 1/4 cup chopped onion
  • 1/2 teaspoon salt
  • lettuce, cups

Directions

  1. Combine all ingredients, except lettuce, being careful not to break the fish into small pieces.
  2. Chill.
  3. Serve in lettuce cups.
