Quick Red Beans and Rice

Ingredients

  • 1 large yellow onion, diced
  • 3 garlic cloves, minced
  • 15 ounce seasoned red or black beans
  • 1 .5 cups instant rice
  • 1 can stewed tomatoes
  • salt
  • cayenne pepper

Directions

  1. Sauté onions and garlic in large sauce pan.
  2. Add beans, tomatoes and cayenne.
  3. Bring the beans to a boil.
  4. Simmer for 5 minutes.
  5. Add instant rice.
  6. Simmer for 5 more minutes.
  7. Remove from heat and let sit for 5 minutes.
