Pork Liver Loaf

Ingredients

  • 1 1/2 pound pork liver
  • 2 1/2 cup soft breadcrumbs
  • 4 slices bacon
  • 1/2 onion
  • 2 eggs
  • 1/4 cup chopped parsley
  • 2 teaspoon salt
  • 1/8 teaspoon pepper

Directions

  1. Let slices of liver stand in hot water for 10 minutes and then grind with the onion and bacon.
  2. Add eggs, crumbs, parsley and seasonings and pack firmly into a loaf pan.
  3. Bake 1 hour at 350° f.
  4. May be sliced cold if desired.
Note: Serve with Creamed Potatoes, Broccoli
