Philadelphia Pepper Pot

Ingredients

  • 4 slices bacon
  • 1 onion
  • 1 green pepper
  • 2 quart soup stock
  • 1 pound honeycomb tripe
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 potatoes
  • 2 tablespoon flour
  • 2 tablespoon butter
  • 1/2 cup milk

Directions

  1. Dice bacon and brown.
  2. Add diced onion and green pepper.
  3. Cook gently for 5 minutes.
  4. Add stock and tripe which has been washed and shredded.
  5. Season.
  6. Simmer for one hour.
  7. Add potatoes and cook for 30 minutes.
  8. Mix the flour and butter to a smooth paste and thicken soup.
  9. Just before serving add milk.
