Northwest Clam Chowder



  1. Chop clams, using course grinder, or cut in small pieces.
  2. Cook 5 minutes in pressure cooker or simmer 1 hour in covered pan.
  3. Broil bacon in oven until crisp but not dark colored.
  4. Peel and dice potato, add 1/2 cup water and cook until tender but not soft.
  5. Dice onion and saute, slowly, in butter until tender.
  6. Roll 6 white crackers, fine, on board with rolling pin.
  7. Combine all ingredients in large pan.
  8. Let stand over night to blend flavors.
  9. Heat to just under boiling point.
  10. Serve in steaming hot bowls.
