
LMON Risotto
Ingredients
- 1 cup arbario (risotto) rice
- 1 3/4 cup chicken broth
- 1/4 cup white wine
- 1/8 cup butter
- 1/2 cup heavy cream
- 1 tablespoon fresh minced garlic
- 1 large lemon, or more depending on taste
- 1 teaspoon fresh dill
- 4 teaspoon yellow curry powder
- salt
- pepper
Directions
- In large sauce pan, prepare rice by bringing chicken broth, wine, garlic and butter to a boil.
- Add rice, little by little, stirring constantly.
- Once all moisture is absorbed, (about 20 min).
- Remove from heat.
- Add in cream, dill, curry and then squeeze in desired amount of lemon juice and zest.
- If left too long, over cooked, simply add a small bit of water to again achieve desired risotto texture.
