Lima Beans Baked in Milk

Ingredients

  • 2 1/2 quart dried lima beans
  • 1 tablespoon salt
  • 3 quart water
  • 1/2 cup butter, or other fat (1/4 pound)
  • 2/3 cup chopped onion
  • 2 1/2 cup diced celery
  • 3 3/4 cup evaporated milk
  • 3 3/4 cup water

Directions

  1. Soak lima beans in water overnight.
  2. Drain, add salt and cook in the 3 quarts water until tender.
  3. Add melted butter, onion, celery, milk and water.
  4. Pour into shallow baking pan.
  5. Cover and bake in a slow oven (300f) 2 hours.
  6. Uncover the last half hour of baking.
