Lima Beans Baked in Milk
Ingredients
- 2 1/2 quart dried lima beans
- 1 tablespoon salt
- 3 quart water
- 1/2 cup butter, or other fat (1/4 pound)
- 2/3 cup chopped onion
- 2 1/2 cup diced celery
- 3 3/4 cup evaporated milk
- 3 3/4 cup water
Directions
- Soak lima beans in water overnight.
- Drain, add salt and cook in the 3 quarts water until tender.
- Add melted butter, onion, celery, milk and water.
- Pour into shallow baking pan.
- Cover and bake in a slow oven (300f) 2 hours.
- Uncover the last half hour of baking.
