Gravy for Veal Birds

Ingredients

  • 2 quart veal stock, from veal birds
  • 1 1/2 cup flour, (6 ounces)
  • 2 cup water
  • 2 quart evaporated milk
  • salt
  • pepper

Directions

  1. Bring veal stock to a boil and add slowly to the flour and water, which have been mixed to a smooth paste.
  2. Stir until smooth and cook until thickened.
  3. Scald the milk and add to the thickened veal stock just before serving.
  4. Season with salt and pepper to taste.
  5. Serve with veal birds.
