French Fish Roe Croquettes

Ingredients

  • 1 can fish roe
  • salt
  • 2 eggs
  • pepper
  • 1 tablespoon cream
  • cracker crumbs

Directions

  1. Mash fish roe with a fork, add one unbeaten egg, cream and seasoning.
  2. Shape into balls or croquettes.
  3. Roll in beaten egg.
  4. Then roll in cracker crumbs.
  5. Fry in deep fat.
  6. Garnish with parsley and cream sauce.
  7. Serve hot.
