Chow Chow

Ingredients

  • 2 quart chopped cabbage
  • 3 tablespoon white mustard seed
  • 1 quart chopped green tomatoes
  • 1 1/4 tablespoon celery seed
  • 6 large onions, chopped
  • 1/4 tablespoon ginger
  • 3 sweet red peppers, chopped
  • salt
  • vinegar, to cover (about 8 cups)
  • 2 pound sugar
  • 4 tablespoon dry mustard
  • 1 tablespoon cloves

Directions

  1. Put each kind of vegetable into a separate bowl and sprinkle a small amount of salt over each.
  2. Let stand 4 hours.
  3. Press juice from each vegetable and combine.
  4. Mix the dry ingredients and rub into a paste by using a small amount of vinegar.
  5. Then add all vegetables and cook the vinegar and heat to boiling.
  6. Put in the slowly for 20 minutes.
  7. Pack in sterile jars and seal.
  8. Cover jars with boiling water and simmer for 15 minutes.
