Bluefish Larded and Baked

Ingredients

Directions

  1. Clean a 4-pound bluefish, stuff and sew it up; cut gashes in fish and insert thin strips of bacon.
  2. Place on a greased fish sheet, sprinkle with salt and pepper, brush with melted butter and dredge with flour; place pieces of salt pork around it.
  3. Roast under the flame about 50 minutes, or until tender, basting frequently with dried out fat.
  4. In cooking fish, the oven should be slow heat after the first 15 minutes.
