Beefsteak and Kidney Pie

Serve with Green Lima Beans, Mixed Pickle Relish

Ingredients

  • 1 pound beef chuck, or round steak
  • 1/8 teaspoon pepper
  • 1/2 tablespoon Worcestershire sauce
  • 1 veal kidney
  • 1/2 large onion
  • 1 tablespoon lard or butter
  • 1 tablespoon flour
  • 1/2 cup boiling water
  • 1 1/2 teaspoon salt

Directions

  1. Soak kidney in cold salted water for 30 minutes.
  2. Cut meat in 1-inch cubes.
  3. Drain kidney and cut into even smaller cubes.
  4. Let sliced onion brown slowly in lard or butter, then add meats and brown well on all sides.
  5. Add salt, pepper and worcestershire sauce and 1/2 cup boiling water.
  6. Simmer slowly for 2 hours or until very tender.
  7. Mix the flour with 1/4 cup cold water and stir into the meat to thicken it.
  8. Transfer to baking dish or individual casseroles and cover top with thin pastry with hole in center for escape of steam.
  9. Bake 30 minutes in a 375° f oven.
