Beef Tongue and Spinach (Fresh)

Ingredients

  • beef tongue
  • salt
  • water

Directions

  1. Cover with cold water, add 1/2 teaspoons salt to each quart of water; bring to a boil.
  2. Simmer slowly until tender.
  3. Allow 2 1/2 to 3 1/2 hours.
  4. Keep tongue in the liquid until cool enough to handle, then remove outer skin.
  5. Serve hot slices with hot piquant sauce or cooked spinach or other greens dressed with french dressing.
Note: Serve with Spinach, Boiled Potatoes
