- 2 teaspoon shin of beef
- 2 carrots
- 2 turnips
- 1 celery, root
- a few cloves
- a little thyme
- a little parsley
- 3 quart cold water
- Make several cuts in the beef and chop the bone; put into the soup kettle with the water and let simmer for one hour, then add the vegetables and season to taste.
- Simmer for two hours.
- Some think it an improvement to fry the meat and vegetables slightly before putting them in the kettle.
