Baked Hominy Grits
Ingredients
- 1 cup hominy
- 1 1/2 teaspoon salt
- 1 quart milk
- 2 eggs
Directions
- Heat milk in double-boiler.
- When hot add hominy that has been washed and soaked in cold water.
- Stir for a few minutes, then let cook for two hours.
- Take from the fire and when lukewarm add eggs well beaten and salt, mix and beat all together.
- Turn into buttered baking dish and bake thirty minutes.
- Serve hot.
