Sweet And Sour Beets

Ingredients

  • 3 cup beets, diced
  • 1/4 cup vinegar
  • 1 cup beet water
  • 2 teaspoon butter
  • 1 tablespoon sugar
  • 1 tablespoon corn, starch

Directions

  1. Cut off beet tops leaving 2 inches of the stems.
  2. Clean well, place in pot and cover with boiling water.
  3. Cook until tender, slip off the outer skins and dice.
  4. Strain and save 1 cup of the water in which beets were cooked.
  5. Add sugar, vinegar and butter.
  6. Thicken with 1 tablespoon of corn starch and cook to the consistency of cream.
  7. Add the diced beets, salt and pepper and heat.
