Suola Kala (Salted Fish)

Ingredients

  • 20 pound fresh, raw salmon
  • 1/2 pound sugar
  • 2 1/2 pound rock salt

Directions

  1. Clean fish— remove backbone.
  2. Let stand overnight.
  3. Add rock salt.
  4. Slice flesh to individual taste and let stand 5 days, add sugar.
  5. Rub into fish well.
  6. Serve on hardtack or rye bread.
  7. If served on hardtack, should be eaten immediately.
