
Suola Kala (Salted Fish)
Ingredients
- 20 pound fresh, raw salmon
- 1/2 pound sugar
- 2 1/2 pound rock salt
Directions
- Clean fish— remove backbone.
- Let stand overnight.
- Add rock salt.
- Slice flesh to individual taste and let stand 5 days, add sugar.
- Rub into fish well.
- Serve on hardtack or rye bread.
- If served on hardtack, should be eaten immediately.
