Spinach in Cream

Yield: 50 one-half cup servings

Ingredients

Directions

  1. Wash spinach carefully to remove all grit.
  2. Cook in a covered kettle without water 10 minutes, stirring occasionally.
  3. Press spinach through a coarse sieve, or chop fine.
  4. Add about 1 cup undiluted evaporated milk to each quart of sieved spinach and heat.
  5. Season with salt and pepper.
  6. If canned spinach is used, drain off juice and chop fine.
  7. Spinach liquid may be used for soup.
