Spiced Cantaloupe

Ingredients

  • 3 pound cantaloupe
  • 1 pint vinegar
  • 2 sticks cinnamon
  • 1/2 tablespoon alum
  • 1/2 tablespoon whole cloves
  • 2 quart water
  • 3 cup sugar
  • 1 teaspoon allspice

Directions

  1. Pare the cantaloupe, remove seeds and cut into strips, 1 x 2 inch or squares.
  2. Dissolve the alum in the water and bring to a boil.
  3. Add the cantaloupe and cook for 15 minutes.
  4. Drain well.
  5. Combine vinegar, sugar and spices.
  6. Cantaloupe and simmer slowly until fruit is transparent.
  7. (About 45 minutes).
  8. Place in hot sterilized jars and seal.
