Soup Maigre

Ingredients

  • vegetables, of any sort
  • butter, dripping, or lard
  • 3 eggs
  • water
  • salt
  • pepper

Directions

  1. Boil the vegetables till tender, pulp them through a sieve, add the water and stir in the butter, while boiling stir in the eggs, beaten to a froth.
  2. Plain boiled rice goes well with this soup.
