Potted Red Cabbage
Ingredients
- 1 medium head red cabbage
- 2 tart apples
- 2 tablespoon bacon, fat
- 1 tablespoon lemon juice
- 1 medium onion
- 1 tablespoon sugar
- salt
- pepper
Directions
- Cut cabbage into small pieces.
- The onion must be finely chopped.
- Put the bacon fat into a heavy pot and when hot add the chopped onion.
- Then put in the chopped red-ca bage and cook for 30 minutes, without water.
- Add the apples which have been cut up small, the lemon juice and sugar.
- Season to taste and cook for another 30 minutes, turning it occasionally with spoon.
