Potato Soup (Gruumbier Suupe)

Ingredients

  • 4 cup diced potatoes
  • 1 quart milk
  • 1 medium onion
  • 1 egg, , beaten
  • 3 tablespoon flour
  • salt
  • pepper
  • 1 tablespoon butter
  • parsley

Directions

  1. Boil potatoes and onion in small amount of water until soft.
  2. Add milk, salt and pepper then reheat.
  3. Brown flour in the butter and blend it slowly into the potato mixture.
  4. Add a little water to the beaten egg and stir into the soup, let it cook for a few minutes and serve with a sprinkling of chopped parsley.
