Potato Pancakes

Directions

  1. Add egg yolks to the mashed potatoes and mix well.
  2. Add the flour and baking powder alternate with the milk until smooth.
  3. Fold in the stiffly beaten egg whites and drop spoonfuls on hot greased griddle or skillet.
  4. Finely chopped onion is sometimes sprinkled on the batter on griddle before turning.
  5. Serve hot with meat.
