Pork Kidney Stew

Ingredients

  • 1 pound pork kidneys
  • 1/8 teaspoon pepper
  • 2 onions, medium sized
  • 3 cup water
  • 1 teaspoon dry mustard
  • 2 tablespoon flour
  • 2 tablespoon butter, or bacon drippings
  • 1 teaspoon salt

Directions

  1. Remove heavy veins from kidneys.
  2. Cube kidneys and and soak 1 hr in cold salted water.
  3. Drain; add fresh cold water; bring to boiling point.
  4. Drain; add 3 cups cold water.
  5. Bring to boiling point, skim, add sliced onions and seasonings.
  6. Simmer about 1 hr until kidneys are tender.
  7. Brown flour in fat and gradually add kidneys and stock, stirring constantly.
  8. Cook slowly about 15 minutes.
Note: Serve with Boiled Rice or Mashed Potatoes, Green Salad
